This Australian Spring Flush 2016/2017 Green Tea is the Winner of the Golden Leaf Award at the Australian Tea Expo for Best Australian Green in 2017. Spring Flush Green tea comes from the first harvest in Spring after a Winter dormancy. This first Spring harvest is the prime cut of tea, prized around the world for the unique qualities of flavor and aroma. The tea is fixed in a large drum ‘steamer’ – basically a heated rotating drum that flash-fries the leaf and steams it in it’s own moisture. It can take up to three days from harvest to the final drying while continually tasting, smelling, and sorting to ensure only the best leaves make it through the process.
The tea bushes are pruned and harvested using a proprietary bike harvester at the estate. It is a human-powered, low-impact machine that cuts following the contours of the land with remarkable accuracy and reliability. At Arakai they also don’t use pesticides or fungicides, though herbicides are occasionally used in weed management.

Brewing Suggestion: We like this tea best in a teapot when we used 1-2 teaspoons (3-5 grams) of tea first brewed for 2-3 minutes with water 2-3 minutes off the boil (~180°F). For gaiwan brewing, use about 5 grams for around 20-30 seconds for the first steep.
