Rabbit’s Foot Single Origin Ceremonial Matcha is a rare, single origin matcha. While most matcha is created from multiple farmer’s leaves and then produced by one factory trying to achieve a particular taste, this matcha is from a single farm and producer. It has a thinner body than the Wolf of Winter but an excellent flavor and super clean finish. I’d say we got pretty lucky with this one.
Grown: Kikugawa, Shizouka, Japan
Year: First Flush 2016, Frozen and Matured, Ground in October 2016
Organic: Organic without Certification, Farm is Pursuing JAS Organic Certification
Dry Aroma: Mild Grass and Hay Sweetness

Brewing Suggestion: We like this tea best in a chawan (tea bowl) when we used 1-2 grams (1/3 teaspoon) of powdered tea whipped using a chasen (bamboo whisk) in a w-pattern until frothy. We recommend using only a few ounces of water (2-3) at about 160 F (2-3 minutes off boil).
Experiment and let us know how you liked it best!
