Wolf of Winter Ceremonial Grade Matcha from Nishio in Aichi, Japan. Like the wolf, that has two layers of fur to beat the cold, harsh winters, this matcha has a full, creamy body and froth with smooth vegetal notes in the broth underneath.
We were really impressed when we first tasted it and we continue to be impressed now.

Brewing Suggestion: We like this tea best in a chawan (tea bowl) when we used 1-2 grams (1/3 teaspoon) of powdered tea whipped using a chasen (bamboo whisk) in a w-pattern until frothy. We recommend using only a few ounces of water (2-3) at about 160 F (2-3 minutes off boil).
